The (only?) tool for creating music is Sleizsa, which was developed by BotB's own b00daw.
Sleizsa is an mml-like compiler which has one channel of sound. It uses MESS to emulate the hardware.
Protip: To record sound directly from MESS, add "-wavwrite filename.wav" to the command line that initiates MESS.
